  1. Sweet Potatoes With Red Pepper & Halloumi

First things first, halloumi is a semi-hard, brined cheese made from goat and sheep’s milk.

It makes a good grill companion because it has a high melting point so it won’t seep through the cracks the second it touches the grill.

Grilled sweet potatoes by themselves are spectacular, and adding the red pepper and cheese brings out a more distinct flavor.

You will need:

  • 4 sweet potatoes
  • Olive oil
  • 8 chopped mint leaves
  • .5 lb. of halloumi cut into slices
  • Red pepper cut into wide strips
  • Bunch of parsley
  • 1 lemon

Rub the potatoes with oil and salt, and wrap them in aluminum foil before placing them on a medium heat grill.

Pour a generous amount of oil into a bowl and stir in the chopped mint. Roll the halloumi in the oil mixture until it is fully covered and then wrap it with a strip of grilled red pepper.

It would be wise to use small strips of foil or skewers to carefully hold the pepper in place around the cheese until it is ready to be eaten.

The potatoes will take about 30 minutes, so give yourself plenty of prep time to let them soften up.

When the potatoes are finished, split them open and place the pepper and cheese wrap in the center, and then top with the parsley and a squeeze of lemon.
