Fire Up the Grill for These Healthy Summer Recipes

  1. Veggie Grilled Pizza

Pizza isn’t exactly a unique recipe, but making it on the grill is. You will get that classic char taste that only a grill can provide.

You will need:

  • 12 ounces baby eggplant, cut crosswise into 1-inch-thick slices
  • 1 medium zucchini, cut crosswise into 1-inch-thick slices
  • 1 large red bell pepper, quartered and seeded
  • 3 garlic cloves, minced
  • 2/3 cup Basic Pizza Sauce
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup (4 ounces) shredded fontina cheese
  • 1/4 cup small mint leaves
  • 2 teaspoons fresh thyme leaves

Prepare your favorite pizza dough. Roll the dough thinly into about 10” pizza crusts.

On high heat, place the dough on until it blisters. Flip it and blister the other side, then remove from the grill.

Brush the eggplant, zucchini, and bell pepper with oil. Grill the zucchini and eggplant until they are tender, and the peppers until blistered

Add garlic to all the vegetables and stir until combined well. Spread marinara sauce over crust, spread vegetables evenly over top, and then cover with the cheese.

Sprinkle the pizza with salt and pepper, and wait for the cheese to melt.

After it is finished, cut the pizza and top it with mint and thyme for that summer flavor.
